Healthy Egg Roll

This healthy egg roll is inspired by a common Korean side dish called Gyeran-Mari or rolled omelette. It is a good alternative to traditional omelette and requires only a few ingredients. You can make this with only two ingredients i.e. eggs and salt. Here I have taken bell peppers, broccoli, and onions.

Bell peppers are exceptionally rich in vitamin C and also include vitamin K1, vitamin A, vitamin E, folate, and potassium. And now coming to broccoli, it is an all-star-food with many health benefits. It is a great source of vitamin K and C and a good source of folate and potassium. Last but not least, onions, which are also rich in vitamin C and are a good source of fibre. So adding these ingredients to the recipe increases its nutritional value. Lightly grease a pan with olive oil. After it heats up, pour in half egg mixture. Lower the flame. Cook until it is half cooked.

Roll the omelette halfway from one side to the middle. And move the egg roll to the edge of the pan. If you want you can lightly grease the empty space of the pan each time you roll-up.
