Homemade Cream Cheese

About Cream Cheese:

Cream cheese is a soft, smooth and mild-tasting fresh cheese. According to the FDA, it contains at least 33% fat with a moisture content of 55% or less.

How to make Cream Cheese:

To make this cheese at home you just need 2 ingredients, which are, milk and lemon juice. Always use full cream milk, as it will make the cheese rich and silky. Pour milk in a pot and bring it to a boil over medium heat. In a separate bowl, dilute the lemon juice with an equal amount of water before pouring it into the milk. Lower the heat and continue adding the lemon mixture until the milk curdles. Pour the milk curds into a strainer and allow it to sit for a few minutes. The liquid that is left after draining, known as whey, can be used in baking. Transfer the milk curds to a food processor or blender. Add salt, herbs, spices etc. Process it until smooth and creamy.

How to store Cream Cheese:

Store it in an airtight container in the refrigerator for up to 7 days.

How to use Cream Cheese:

Use it as a spread over toast or in baking cheesecakes. You can also use it in making cream cheese frosting. Or just mix some herbs with it and serve it as a dip with potato chips.

Yield: 1 cup

Ingredients:

  • 1-litre full cream milk
  • 2 tbsp lemon juice
  • 2 tbsp water
  • Salt and pepper (optional)

Cooking Directions:

Heat milk in a pot over medium flame. Bring it to a boil and then lower the flame.

In a bowl, pour lemon juice and water. Mix well.

Add this lemon mixture to the milk, one tablespoon at a time and keep stirring gently.

As soon as the milk curdles, stop adding this mixture. Remove from heat.

Take a large bowl and place a strainer over it. Line the strainer with a muslin cloth. Pour the curd mixture into the strainer. Allow it to cool down.

Transfer it to a blender and process until smooth. You can season it with salt and pepper.

Homemade Cream Cheese

Homemade cream cheese is ready. Apply it over a toast or make cheesecake.

Note:

  • Store the cheese in an airtight container in the refrigerator for up to 7 days.
  • The thin liquid that is left after draining the cheese is known as whey. It is rich in protein, vitamins and minerals. Whey can be used in place of buttermilk or milk in baking. Like bread, pizza dough, etc.
