Mini Cauliflower Pizza

So today I am sharing my 100th post on this blog. Still can’t believe that I have written so many recipes. Thank you, everyone, for visiting my blog and liking my work. To celebrate, I am sharing this really special recipe with you guys. It is a healthy pizza which is made with cauliflower. This is a low-carb recipe and is perfect for lower grain diets. This recipe is adapted from Laura Vitale’s cauliflower pizza recipe.

Mini Cauliflower Pizza

To make this recipe, you need cauliflower rice. You can make it at home or even use the store-bought cauliflower rice. Please read the note section below to know the procedure of making cauliflower rice at home.

Then steam the cauliflower rice in a pan or microwave. After it cools down, drain all the water out. Add it to a bowl and pour all the other pizza base ingredients. Mix to form a dough. Divide it into small dough balls and flatten them out to make mini pizza crusts. Bake them until they become crisp, then add the toppings and bake until the cheese is bubbly.

Garnish these mini pizzas with basil or chilli flakes and serve hot. Enjoy!

Serves: 7-8 mini pizzas

Ingredients:

For the cauliflower:

  • 6 cups cauliflower rice, approximately 3 medium-sized cauliflower (see recipe notes)
  • ½ cup water
  • 1 tsp salt

For the pizza base:

  • 1 cup mozzarella cheese, grated
  • ¼ cup ground almond (see recipe notes)
  • 1 egg
  • 2 tsp garlic powder
  • 1 tbsp Italian or pizza seasoning
  • Pinch of salt

For the garlic butter:

  • 3 tbsp butter
  • 2 tsp garlic powder

For the topping:

  • ¾ cup pizza sauce
  • 1 cup mozzarella cheese
  • 7-8 chicken salami, slices
  • 3 tsp dried basil
  • Chilli flakes, for garnishing

Cooking Directions:

Heat a non-stick pan over medium flame. Add the cauliflower rice, water and salt. Mix well.

Lower the flame. Cover with a lid and cook for 8 to 10 minutes. You may also cook it in a microwave. Just add all the three ingredients into a microwave-safe bowl and cover it with a plate. Microwave for 15 minutes.

Allow it to cool down. Transfer it to a muslin cloth and squeeze out all the water. Try to remove as much moisture as you can. Add it to a bowl. Then add mozzarella cheese, ground almond, egg, Italian seasoning, garlic powder and salt.

Combine everything together. And divide the mixture into small dough balls.

Transfer the dough balls to a baking tray lined with parchment paper. Pat them to form small circles. It should be 1/4 inch thick. Place them in a preheated oven at 180-degree Celcius for 20 minutes. The crust should be dry and golden.

To make the garlic butter, add butter and garlic powder in a bowl. Mix well. Keep it aside.

Once you bake all the cauliflower pizza crusts, apply this garlic butter over all the crusts with a brush. Then apply a thin layer of pizza sauce. Don’t use excess sauce, otherwise, the crust can become soggy.

Add a layer of mozzarella cheese. To make these small salami slices, take a slice of regular chicken salami and cut it with the smallest cookie cutter. Place the slices on the pizza. Sprinkle basil leaves and bake for 10 more minutes.

Once the cheese has melted and the crust looks crisp, take them out of the oven and place them over a rack.

Garnish with more basil or chilli flakes. Serve hot.

Recipe Notes:

  • How to make cauliflower rice at home – Wash and dry cauliflower head. Cut it into florets. Then transfer it to a food processor and pulse until it’s rice-like in texture. You can also use a grater to make cauliflower rice. Just cut the cauliflower into large pieces and grate it.
  • How to make almond flour or ground almond at home – Take whole raw almonds and add them to a blender. Blend until it becomes fine and powdery.
  • Make sure you squeeze out all the moisture from the cauliflower rice, as it will make the crust crispy and crunchy.
