Healthy Pasta Salad
A quick vegetarian salad recipe that can be put together within 15 minutes.

- 2 cups fusilli pasta cooked
- ½ cup cucumber chopped
- ⅓ cup onion sliced
- ½ cup tomato chopped
- ½ cup carrots chopped
- ½ cup rajma or kidney beans cooked
- 2 tbsp ricotta cheese
For the dressing:
- ¼ cup olive oil
- 2 tbsp lemon juice
- 1 tsp honey
- 1 large-sized garlic clove minced
- 2 tsp Italian seasoning
- 1 tsp black pepper powder
- Pinch of chilly flakes
- Salt to taste
To make the dressing, take a large bowl and add all the ingredients listed under salad dressing. Give it a good whisk.
Then to the same bowl, add cooked pasta, kidney beans, chopped cucumber, onion, tomato and carrot. Toss until all the ingredients are evenly coated with the dressing.
Garnish with fresh ricotta cheese and serve.
