Healthy Egg Roll

This healthy egg roll is inspired by a common Korean side dish called Gyeran-mari or rolled omelette.

Ingredients
  

  • 4 eggs
  • 2 tablespoon milk
  • 1 tablespoon red bell pepper finely chopped
  • 1 tablespoon yellow bell pepper finely chopped
  • 1 tablespoon green bell pepper finely chopped
  • 1 tablespoon broccoli finely chopped
  • 1 tablespoon onion finely chopped
  • Salt and pepper for seasoning

Instructions
 

  • First, chop all the vegetables.
  • Then in a pan add 1 tsp olive oil. After it heats up add chopped onions. Fry for a minute then add chopped broccoli.
  • Cover it with a lid and cook for a few minutes.
  • Now add in rest of the chopped vegetables (here I have taken red, yellow and green bell peppers but you can add whichever vegetables you like).
  • Then crack the eggs into a mixing bowl and add salt, pepper and milk. Whisk until combined. Now add all the vegetables and stir until combined.
  • Lightly grease a pan with olive oil. After it heats up, pour in half egg mixture. Lower the flame. Cook until it is half cooked.
  • Roll the omelette halfway from one side to the middle. And move the egg roll to the edge of the pan. If you want you can lightly grease the empty space of the pan each time you roll-up.
  • Now add 1/4 egg mixture to the pan and cook until half cooked.
  • Then roll again halfway and move the egg roll to the edge of the pan. Now add the remaining egg mixture and cook until half cooked.
  • Then finally roll all the way up. Transfer it to a chopping board. Let it cool down. Then cut it into bite-size pieces. And serve this healthy egg roll immediately. Enjoy!
