Melt butter in the microwave for 30 seconds, and keep it aside. In a medium-sized bowl, add mango puree. Then add egg, milk, mango essence and melted butter.
Whisk everything together until well combined.
Pour flour and baking powder into the liquid mixture.
Mix everything together with the help of a whisk. Make sure there are no lumps. But do not over mix the batter. It should be thick and creamy in texture.
Heat a non-stick pan or tawa over medium heat. Using a brush, lightly grease the pan with oil. Pour a 1/4th cup of batter onto the pan and spread it out into a round shape.
Cook each side for 5-6 minutes or until golden brown in colour. Repeat the same process to make the rest of the pancakes.
To make the mango sauce:
In a large bowl, take 1/2 cup mango puree. Add honey and water.
Mix it with the help of a whisk.
Place the pancakes on a plate. Drizzle the homemade mango sauce over the top and add some chopped mangoes. Serve.
