Ingredients:

For the Zesty Potato Filling

  • 1 cup Boiled potato, grated and cooled (cooling is key for texture!)
  • 2 cups Fresh coriander leaves
  • 1 Green chilli (adjust to your spice preference)
  • 1 inch Fresh ginger
  • ½ Lemon, juiced
  • ½ tsp Chaat masala
  • 1 tsp Roasted sesame seeds
  • To taste: Black salt, regular salt, and black pepper

For the Pastry & Assembly

  • 10 Puff pastry sheets (store-bought or homemade)
  • As required: Cheese slices (for that perfect melt)
  • All-purpose flour: Just a bit for dusting
  • Milk: For the milk wash (gives that golden-brown finish)
  • Sesame seeds: For a crunchy, decorative garnish

Part 1: Prepare the Spiced Potato Filling

  1. Prepare the Paste: In a grinder or food processor, combine the coriander leaves, green chilli, ginger, and lemon juice. Grind until you achieve a smooth, bright green paste.
  2. Season the Paste: Transfer the paste to a bowl. Add the chaat masala, roasted sesame seeds, black salt, regular salt, and black pepper powder. Mix well.
  3. Mix the Potato: Add the grated boiled potato to the seasoned paste. Use a spatula to gently mix everything together, ensuring there are no lumps and the filling is evenly spiced.

Part 2: Assemble the Christmas Tree Samosas

  1. Prepare Pastry: Take one sheet of puff pastry. Lightly dust the top with all-purpose flour.
  2. Cut the Shape: Using a circular cutter, cut a circular shape from the pastry sheet.
  3. Score and Flour: Flip the circle over. On one half (a semi-circle), lightly dust flour (this side will be scored). Important: Keep the edges clear of flour.
  4. Make the Cuts: On the floured semi-circle, use a sharp knife or pizza cutter to make several diagonal cuts. Do not cut all the way through the edges.
  5. Add Filling: Spread a generous spoonful of the potato mixture over the uncut half of the circular dough, leaving a clear border around the edges for sealing.
  6. Fold and Seal: Gently fold the scored semi-circle over the filling, aligning the edges. Firmly press the edges to seal them completely. You now have a semi-circular shape.

Part 3: Create the Tree Shape

  1. Form the Triangle (Samosa): Place the sealed semi-circle flat.
    • Bring one pointed end of the semi-circle towards the center and press down.
    • Bring the other pointed end of the semi-circle towards the center, overlapping the first fold slightly, to create a triangular, cone-like shape (the basic samosa shape, which now resembles a Christmas tree).
  2. Final Seal: Pinch and seal the bottom corner of the triangle firmly. The diagonal cuts you made should be visible on the top layer.
  3. Repeat: Repeat the process for the remaining pastry sheets and filling.
  4. Prepare for Baking: Line a baking tray with parchment paper. Transfer the Mini Christmas Tree Samosas onto the tray.

Part 4: Bake and Finish

  1. Preheat: Preheat your oven to 180 degrees Celsius (350 degrees Fahrenheit).
  2. Milk Wash and Garnish: Lightly brush the samosas with milk wash (or an egg wash for extra color). Sprinkle sesame seeds over the tops for garnish.
  3. Bake: Bake for 30–35 minutes, or until the pastry is golden brown, puffed, and flaky.

  5. Cut a circular shape from a puff pastry sheet.
  6. Flip the circle. On one semi-circle half, lightly dust flour and make several diagonal cuts. Keep the edges clear.
  7. Spread potato mixture over the un-cut half, leaving a border.
  8. Fold the scored side over the filling to form a semi-circle. Press and seal the edges firmly.
  9. Bring one corner of the semi-circle to the center, then overlap with the other corner to form a triangular/cone shape (the “tree”). Seal the final corner.
  10. Transfer to a lined tray. Brush with milk and sprinkle sesame seeds.
  11. Bake in a preheated oven at 180 degree Celsius for 30–35 minutes, until golden and puffed.
  12. Use a star-shaped cookie cutter to cut star shapes from the cheese slices.
  13. Immediately after baking, place a cheese star on top of each samosa tree. Serve warm!
