Prep Time: 30 min | Cook Time: 5 min | Total Time: 35 min
Serves: 12 cookie cups
Ingredients
- Crust Base:
- 100g (approx. 11 pieces) Digestive Biscuits
- 2–3 tbsp Creamy Peanut Butter
- 1–2 tbsp Honey
- 1.5 tbsp Cocoa Powder
- Topping/Coating:
- ½ cup Peanuts (in the shell, or use shelled peanuts)
- Filling:
- Peanut Butter (extra)
- Melted Chocolate
Method
1. Prepare the Biscuit Base
- In a food processor, grind the digestive biscuits until they form fine crumbs.
- Transfer the biscuit crumbs to a mixing bowl.
- Add the peanut butter, honey, and cocoa powder to the bowl.
- Mix all ingredients thoroughly until a sticky, uniform mixture is formed.
2. Prepare the Peanuts
- If using shelled peanuts, crack the shells and take out the nuts.
- Transfer the peanuts to the food processor and pulse them until they are roughly chopped. Do not grind them into a powder.
3. Shape and Coat the Cups
- Scoop the biscuit mixture and roll it into individual balls (about a tablespoon each).
- Roll each ball in the roughly chopped peanuts to coat the outside.
- Place the coated balls on a plate or tray. Using the back of a small teaspoon (or your thumb), gently press a depression into the center of each ball to form a “cup” shape.
4. Fill and Finish
- Pipe or spoon a small amount of peanut butter into the bottom of each cookie cup depression.
- Drizzle or pipe the melted chocolate over the peanut butter.
- Refrigerate the cookie cups until the chocolate filling has fully set (this usually takes about 30–60 minutes).
- Serve and enjoy!
