Rinse, peel and chop all the vegetables. Boil all the vegetables in a pressure cooker. Save the water for later use.
In a pan, add butter, as soon as it melts add in the chopped onions.
After it becomes translucent, add ginger-garlic paste. Mix and cook till the raw smell goes away.
Then add chopped tomatoes, salt, turmeric powder, coriander powder and red chilli powder.
Mix everything together and cook for a few minutes.
Add the boiled vegetables except for potato.
Mix everything and cook for another few minutes. Add pav bhaji masala.
Then add boiled potatoes.
Using a potato masher, mash all the vegetables. As soon as the bhaji or gravy starts to dry, add the water in which the vegetables were boiled. Then let it simmer for 3 to 4 minutes.
Remove from heat as soon as the bhaji thickens up. Drizzle lemon juice and add a dollop of butter on top of the bhaji.
Serve with pavs, which are nicely toasted in butter.
