Ingredients
  

  • 4 medium potatoes chopped
  • 2 carrot chopped
  • 2 capsicum chopped
  • 1 cup chopped cauliflower
  • 4 medium tomatoes chopped
  • 1 large onion chopped
  • 1 tbsp ginger-garlic paste
  • 2 tbsp butter
  • 2 tsp pav bhaji masala
  • 1 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • 1 tsp coriander powder
  • Salt to taste
  • 2 tsp lemon juice
  • Butter for serving
  • 1 tbsp chopped coriander leaves for garnish
  • 6-8 pav

Instructions
 

  • Rinse, peel and chop all the vegetables. Boil all the vegetables in a pressure cooker. Save the water for later use.
  • In a pan, add butter, as soon as it melts add in the chopped onions.
  • After it becomes translucent, add ginger-garlic paste. Mix and cook till the raw smell goes away.
  • Then add chopped tomatoes, salt, turmeric powder, coriander powder and red chilli powder.
  • Mix everything together and cook for a few minutes.
  • Add the boiled vegetables except for potato.
  • Mix everything and cook for another few minutes. Add pav bhaji masala.
  • Then add boiled potatoes.
  • Using a potato masher, mash all the vegetables. As soon as the bhaji or gravy starts to dry, add the water in which the vegetables were boiled. Then let it simmer for 3 to 4 minutes.
  • Remove from heat as soon as the bhaji thickens up. Drizzle lemon juice and add a dollop of butter on top of the bhaji.
  • Serve with pavs, which are nicely toasted in butter.
