Heat a heavy-bottomed pot over medium flame. Pour olive oil and allow it to heat up a little. Then add chopped garlic. Give it a stir and cook for 1-2 minutes or until it is fragrant. The garlic should become slightly soft and its colour should remain white/cream.
Add the chopped onions into the pot. Sweat them for a few minutes until they become translucent. Again, don’t overcook, the onions shouldn’t develop any colour.
Pour tomato puree, oregano, basil, paprika, black pepper powder, sugar, salt and water. Give it a good stir.
Allow the pizza sauce to come to a simmer. Then reduce the heat to low.
Cover it with a lid and allow it to simmer for 5-6 minutes while stirring occasionally.
Uncover the pot and give it a stir. Let it cook for another 5-6 minutes. Keep stirring frequently and allow the sauce to thicken.
As soon as the sauce thickens, turn the flame off. Allow it to cool down completely. Then you can either pour a few spoonfuls of it over a pizza base and make your favourite pizza. Or pour it in a clean and airtight jar. Then store it in the refrigerator for up to 4-5 days.
