Healthy Pasta Salad

A quick vegetarian salad recipe that can be put together within 15 minutes.

  • 2 cups fusilli pasta cooked
  • ½ cup cucumber chopped
  • cup onion sliced
  • ½ cup tomato chopped
  • ½ cup carrots chopped
  • ½ cup rajma or kidney beans cooked
  • 2 tbsp ricotta cheese

For the dressing:

  • ¼ cup olive oil
  • 2 tbsp lemon juice
  • 1 tsp honey
  • 1 large-sized garlic clove minced
  • 2 tsp Italian seasoning
  • 1 tsp black pepper powder
  • Pinch of chilly flakes
  • Salt to taste


  • To make the dressing, take a large bowl and add all the ingredients listed under salad dressing. Give it a good whisk.
  • Then to the same bowl, add cooked pasta, kidney beans, chopped cucumber, onion, tomato and carrot. Toss until all the ingredients are evenly coated with the dressing.
  • Garnish with fresh ricotta cheese and serve.
