Add coconut milk powder in a bowl.
Pour 1 cup warm water and whisk until well combined. Make sure there are no lumps in the mixture. You can also substitute it with 1 cup of fresh coconut milk.
Heat a pot over medium flame. Pour oil and allow it to heat up. Then add bay leaves, cinnamon stick and green cardamoms. Cook until they become fragrant. It may take approximately 1-2 minutes.
Add the chopped onions. Cook them until they become soft and slightly translucent.
Add the chopped green chillies, garlic and ginger. Saute until the raw smell disappears.
After that pour the chopped carrots and french beans. Cook for a minute or two.
Pour coriander powder, turmeric powder, black pepper powder, sugar and salt. Give everything a good mix. Cook for 2-3 minutes.
Then pour 8 cups of water into the pot, increase the flame to high and bring it to a boil. Once it comes to a boil, add the noodles.
Reduce the flame to low and cover it with a lid. Cook for 5-7 minutes or until the noodles are fully cooked.
Uncover the pot and pour coconut milk into the curry. Give it a stir and bring it to a boil.
Turn the flame off and pour lemon juice. Mix it well. Serve one-pot coconut curry noodles in a bowl and garnish with thinly sliced green chillies.
