Lemon Rice | Quick Rice Recipe

Lemon rice is a famous South Indian rice dish. It is bright yellow in colour, tangy and extremely flavourful.

- 2 cup basmati rice or long grain rice
- 4 cup water
- 2 tbsp oil
- 2 tsp dark mustard seeds
- 4 dried red chillies
- 1 tsp turmeric powder
- 2 tsp curry leaves thinly sliced
- Salt to taste
- Juice of one lemon
- 2 tsp lemon zest
- Coriander leaves and lemon slices for garnishing
Boil water in a pot with some salt. Then add the washed rice. Cook until done. It can take around 10-15 minutes. After that drain the rice with the help of a colander.
In a wok, heat oil on medium heat. Add the mustard seeds.
Once the seeds crackle, add dried red chillies. Fry for a few seconds.
Add turmeric powder and cook for a minute or until its raw smell goes away.
Then add the chopped curry leaves, cook for another minute.
Add the rice and give it a nice mix. But be gentle as the rice can break.
Lower the heat, add salt, lemon juice and lemon zest. Mix again. Remove from heat.
Garnish the rice with fresh coriander leaves and lemon slices.
