Heat a pressure cooker over a medium flame. Add ghee and allow it to melt.
Add raisins and cook for a few seconds. Then take them out and keep them aside.
Add cashews and almonds. Cook for a few seconds until they become light golden. Then take them out and keep them aside.
Add grated black/kali gajar to the pressure cooker. Give it a good stir.
Add milk and mix well. Close the lid. Cook for 3-4 whistles or until the carrot softens. Turn the flame off
Carefully remove the steam and open the cooker. Bring it to a boil over a medium flame.
Add ghee and give it a good mix. Cook for 8-10 minutes or until the milk is completely reduced.
Add sugar and salt. Mix well. Cook for 3-4 minutes.
Turn the flame off. Add fried nuts, raisins and green cardamom powder. Mix well.
Transfer it to a serving bowl. Garnish with more fried nuts and raisins.
Kali gajar ka halwa is ready to serve!
