Halwai-Style Kali Gajar Ka Halwa Recipe

Ingredients
  

To fry the dry fruits:
  • ¼ cup ghee
  • 10-15 raisins
  • 10-15 cashews roughly chopped
  • 10-15 almonds slivered
To pressure cook carrots:
  • 1 kg black carrot grated
  • 1- litre milk
To make the halwa:
  • ½ cup + 3 tbsp ghee
  • ½ cup sugar
  • A pinch of salt
  • ¼ tsp green cardamom powder

Method
 

  1. Heat a pressure cooker over a medium flame. Add ghee and allow it to melt.
  2. Add raisins and cook for a few seconds. Then take them out and keep them aside.
  3. Add cashews and almonds. Cook for a few seconds until they become light golden. Then take them out and keep them aside.
  4. Add grated black/kali gajar to the pressure cooker. Give it a good stir.
  5. Add milk and mix well. Close the lid. Cook for 3-4 whistles or until the carrot softens. Turn the flame off
  6. Carefully remove the steam and open the cooker. Bring it to a boil over a medium flame.
  7. Add ghee and give it a good mix. Cook for 8-10 minutes or until the milk is completely reduced.
  8. Add sugar and salt. Mix well. Cook for 3-4 minutes.
  9. Turn the flame off. Add fried nuts, raisins and green cardamom powder. Mix well.
  10. Transfer it to a serving bowl. Garnish with more fried nuts and raisins.
  11. Kali gajar ka halwa is ready to serve!
