Achaari Laccha/Lachha Paratha Recipe

Ingredients
  

  • 1 dough ball made with atta/wheat flour
  • ½ - 1 tbsp aam ka achaar/mango pickle chopped
  • Ghee for brushing
  • Atta/Wheat flour for dusting
  • Butter for brushing

Method
 

  1. Take a dough ball and roll it out into a circle.
  2. Brush ghee over it.
  3. Add the achaar. Spread it out.
  4. Sprinkle wheat flour.
  5. Start rolling from one side.
  6. Sprinkle wheat flour.
  7. Slice the log of dough in half. But don’t cut the ends. Just make a slit (watch video).
  8. Twist the log, so that the layers are facing up.
  9. Start rolling the dough from one side.
  10. Roll the dough into a ball (like a pinwheel). Tuck the end at the bottom.
  11. Sprinkle more flour. Roll it out.
  12. Note: While rolling, if the dough starts sticking to the rolling pin/belan then sprinkle little flour over the dough.
  13. Heat the tawa over medium flame.
  14. Toast both sides of the paratha.
  15. Brush ghee on one side. Flip and cook until golden.
  16. Apply ghee on the other side. Flip and cook until golden.
  17. Brush the achaari laccha paratha with butter.
  18. Serve hot with dahi.
