Method
- Rinse and soak chana dal in water for 6-8 hours.
To make the dough:
- In a bowl, add wheat flour, all-purpose flour, turmeric, salt, ghee and water. Mix well.
- Knead to make a soft dough. Apply ghee, cover it with a damp cloth. Keep aside.
To make the stuffing:
- Take the chana dal, drain the water, and transfer the dal to a pressure cooker.
- Pour water. Pressure cook until the dal has fully cooked.
- Transfer the cooked chana dal to a pan.
- Add jaggery. Mix well.
- Mash the dal until it becomes smooth.
- Add ghee, cardamom powder and nutmeg powder. Mix well.
- Continue cooking, while stirring continuously, until the water evaporates and the mixture becomes dry.
- Allow it to cool down.
To make puran poli:
- Divide the dough and the stuffing into small balls.
- Take a dough ball. Flatten it. Add the stuffing. Bring the edges together and seal it.
- Apply ghee on the rolling surface.
- Place dough ball, flatten it out with your.
- Then roll it out using a rolling pin.
- Heat a tawa over medium flame.
- Transfer it to the tawa.
- Toast both sides well.
- Apply ghee and cook both sides until golden in colour.
- Make the rest of the puran poli in the same manner.
- Serve them hot with ghee.
