Heat water in a pot. After it comes to a boil, turn the heat off. Add the cauliflower florets and blanch for 10 minutes. Then drain the cauliflower and keep aside.
To make the batter, take a bowl, add all-purpose flour, cornflour, rice flour, ginger-garlic paste, baking powder, red chilli powder and salt. Mix well.
Heat oil in a heavy-bottomed wok over medium flame.
Pour water and make a smooth batter. The batter should neither be too thin nor too thick. Lower the flame and then dip the cauliflower florets into the batter. Carefully drop them into the wok. Make sure you don’t overcrowd the wok.
Cook until they become golden and crispy. Then take them out on an absorbent paper. Allow them to cool down a little.
In a large bowl, pour tomato sauce and red chilli sauce. Give it a nice mix. Then add the fried cauliflower bites and toss well.
Sprinkle chopped coriander leaves over the top and immediately serve these spicy cauliflower bites.
