Jolbhora Sandesh Modak Recipe

Ingredients
  

  • 4 cups chana/chhena
  • 1 cup khejur gur/date palm jaggery
  • 4-5 tbsp khejur jur/date palm jaggery syrup
  • Ghee for greasing

Method
 

  1. Grind chhena and gur until you get a smooth paste.
  2. Heat a non-stick pan on low heat.
  3. Add the chhena mixture. Cook for 3-4 minutes (approx.), while stirring continuously, until the mixture thickens and leaves the sides of the pan.
  4. Take it out in a bowl and allow it to cool down a little.
  5. Take a modak mould. Grease it with ghee. Close it.
  6. Fill it with a little sandesh mixture.
  7. Spread and press it evenly, all around the inside of the mould.
  8. Keep filling until just a little space is left in the middle.
  9. Pour ½ to 1 tsp khejur gur syrup into it.
  10. Adjust the quantity of the syrup depending on the mould size. Here I have used ¾ tsp syrup for each modak.
  11. Avoid overfilling, as it will become difficult to seal it later on and the modak might leak.
  12. Then take a small amount of sandesh mixture, place it at the bottom of the mould and seal it well.
  13. Carefully open the mould and take the modak out. Place it on a plate.
  14. Make the other modaks in the same manner.
  15. Jolbhora Sandesh Modak is ready!

Notes

I have melted the khejur gur with a little water to make this syrup.
