Method
- Melt butter in the microwave for 30 seconds, and keep it aside. In a medium-sized bowl, add mango puree. Then add egg, milk, mango essence and melted butter.
- Whisk everything together until well combined.
- Pour flour and baking powder into the liquid mixture.
- Mix everything together with the help of a whisk. Make sure there are no lumps. But do not over mix the batter. It should be thick and creamy in texture.
- Heat a non-stick pan or tawa over medium heat. Using a brush, lightly grease the pan with oil. Pour a 1/4th cup of batter onto the pan and spread it out into a round shape.
- Cook each side for 5-6 minutes or until golden brown in colour. Repeat the same process to make the rest of the pancakes.
To make the mango sauce:
- In a large bowl, take 1/2 cup mango puree. Add honey and water.
- Mix it with the help of a whisk.
- Place the pancakes on a plate. Drizzle the homemade mango sauce over the top and add some chopped mangoes. Serve.
