Ingredients Method

Ingredients
  

For the filling:
  • 1 large-sized potato boiled
  • ½ cup boiled white peas
  • ¼ cup chopped coriander leaves
  • 1 green chilli chopped
  • 1 small-sized tomato chopped
  • ½ small-sized cucumber chopped
  • ½ medium-sized onion chopped
  • 1 tsp red chilli flakes
  • 1 tsp red chilli powder
  • 1 tsp chaat masala powder
  • 1 tsp black salt
  • 1 Wai Wai Noodles
  • ½ tbsp lemon juice
For the coriander paste:
  • 1-2 cups chopped coriander leaves
  • 12-15 mint leaves
  • 2-3 green chilli
  • 3 cloves of garlic
  • 1 inch ginger
  • 1-2 tbsp lemon juice
  • 1 ice cube
For the pani puri pani:
  • 1 cup tamarind pulp made by soaking ½ cup tamarind in 1 cup water
  • ½ medium-sized onion chopped
  • 1 green chilli chopped
  • ¼ cup chopped coriander leaves
  • 1 tsp red chilli powder
  • 1 tsp red chilli flakes
  • 2 tsp chaat masala powder
  • 2 tsp black salt
  • 2 tsp amchur
  • ¼ tsp salt or to taste
  • 2 pinches of hing asafoetida
  • 3 cups chilled water
Other ingredients:
  • Ice cubes as required
  • Golgappe/puri as required

Method
 

Preparing the Filling:
  1. In a large bowl, mash the boiled potato well.
  2. Add white peas, chopped coriander leaves, green chilli, tomato, cucumber, onion, red chilli flakes, red chilli powder, chaat masala, and black salt.
  3. Crush the Wai Wai noodles and add them to the mixture, including the seasoning packet (taste enhancer, onion-flavoured oil, and red chilli powder).
  4. Squeeze in lemon juice and mix everything well.
Preparing the Pani Puri Pani:
  1. Blend coriander leaves, mint leaves, green chilli, garlic, ginger, lemon juice, and ice cube into a smooth paste.
  2. In a large bowl, combine the coriander paste, tamarind pulp, chopped onion, green chilli, coriander leaves, red chilli powder, red chilli flakes, chaat masala, black salt, amchur, salt, and hing. Mix well.
  3. Add chilled water to the mixture and stir well.
  4. Your spicy Pani Puri pani is now ready!
Serving the Nepali Wai Wai Pani Puri:
  1. Add ice cubes to the spicy pani to chill it further.
  2. Poke a hole in each puri with your thumb.
  3. Fill the puri with a few spoonfuls of the Wai Wai filling.
  4. Dip the filled puri into the spicy pani and serve immediately.
  5. Your Nepali Wai Wai Pani Puri is now ready to enjoy!
