Simple Lemon Rice Recipe

When life gives you lemons, make lemon rice!

Ingredients
  

  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp urad dal
  • 1 tsp chana dal
  • 2 dried red chillies
  • 2 tbsp peanuts
  • 10-12 cashews
  • 10-12 curry leaves
  • 2 green chillies chopped
  • ¼ tsp hing asafoetida
  • ½ tsp turmeric powder
  • Salt to taste
  • 2 tbsp lemon juice
  • 2 cups cooked rice
  • Lemon slices and fried curry leaves for garnishing

Instructions
 

  • Heat oil in a kadai over medium flame. Reduce the heat and add mustard seeds. Let them splutter.
  • Add urad dal, chana dal, dried red chilli, peanuts and cashews. Cook until the nuts are golden and crunchy.
  • Add curry leaves, green chilli, hing, and turmeric. Cook for a minute.
  • Turn the flame off. Add salt, lemon juice and rice.
  • Gently toss everything together to combine.
  • Transfer to a plate. Garnish with a slice of lemon and some crispy curry leaves.
  • Your flavourful lemon rice is now ready to serve!
