Simple Lemon Rice Recipe

When life gives you lemons, make lemon rice!

- 2 tbsp oil
- 1 tsp mustard seeds
- 1 tsp urad dal
- 1 tsp chana dal
- 2 dried red chillies
- 2 tbsp peanuts
- 10-12 cashews
- 10-12 curry leaves
- 2 green chillies chopped
- ¼ tsp hing asafoetida
- ½ tsp turmeric powder
- Salt to taste
- 2 tbsp lemon juice
- 2 cups cooked rice
- Lemon slices and fried curry leaves for garnishing
Heat oil in a kadai over medium flame. Reduce the heat and add mustard seeds. Let them splutter.
Add urad dal, chana dal, dried red chilli, peanuts and cashews. Cook until the nuts are golden and crunchy.
Add curry leaves, green chilli, hing, and turmeric. Cook for a minute.
Turn the flame off. Add salt, lemon juice and rice.
Gently toss everything together to combine.
Transfer to a plate. Garnish with a slice of lemon and some crispy curry leaves.
Your flavourful lemon rice is now ready to serve!
