Instant Benne Dosa
Benne Dosa, which means “butter dosa,” comes from Davangere, a city in Karnataka, India. It’s famous for its rich butter taste and how it’s both crispy on the outside and soft inside. While this quick recipe can use a lot of butter for that classic rich flavour, you can easily use less to make it a healthier choice. It’s a tasty and adaptable option for your breakfast!
Ingredients:
For soaking:
1 cup suji/semolina
1 cup water
½ cup thick poha
1 cup buttermilk
For the batter:
¾ cup rice flour
2-3 tbsp all-purpose flour
1 tsp sugar
Salt to taste
1 cup water
1 tsp eno or fruit salt
1 tbsp water
Cubes of butter, as per liking
Instructions:
In a bowl, add suji and water. Mix well. Soak for 10-15 minutes.
In another bowl, add poha and buttermilk. Mix well. Soak for 10-15 minutes.
Add both mixtures to a blender. Pour ½ cup water. Blend to make a smooth batter.
Transfer it to a bowl.
Add rice flour, all-purpose flour, sugar and salt. Mix well.
Pour ½ cup water and mix again.
Heat tawa over a high flame.
Add eno/fruit salt and 1 tbsp water. Mix well.
Sprinkle water over the tawa and wipe it.
Apply oil with onion.
Pour a ladle of batter. Spread it to make a slightly thick dosa.
Let it cook on a medium flame until the top sets or becomes dry.
Then add butter and spread it over the dosa.
Cook for a few seconds.
Then flip and cook the other side for a few seconds.
Flip again. Fold and transfer to a plate.
Make the rest of the dosa in the same manner.
Instant benne dosa is ready!
Serve it hot with sambar and chutney.
Instant Sponge Dosa
This versatile and beloved Instant Sponge Dosa goes by many names – you might also hear it called Set Dosa or Curd Dosa. Unlike its crispy cousins, this dosa is known for its incredibly soft, fluffy, and porous texture, much like a sponge. It’s often served in “sets” of two or three, making it a satisfying and light meal.
What makes it truly special for a busy morning is that it requires no long fermentation! Typically made with semolina (rava), flattened rice (poha), and the key ingredient, curd (yogurt), this dosa comes together quickly. The curd helps give it a slight tang and contributes to its signature soft texture. It’s a fantastic instant breakfast recipe that pairs perfectly with a variety of chutneys or a flavourful vegetable sagu.
Ingredients:
1 cup thin poha (or ¼ cup thick poha)
1 cup rava/suji/semolina, coarse
1 cup curd/yoghurt
1 tsp salt
1 cup + 1 tbsp water
Add ½ tsp eno or fruit salt (or ¼ tsp baking soda or ½ tsp baking powder)
Oil, as required
Instructions:
In a bowl, add poha and rinse with water.
Squeeze all the water out and transfer the poha to a bowl.
Add rava, curd and salt. Give it a good mix.
Add ½ cup water and mix well. Cover and let rest for 15-30 minutes.
Add ½ cup water. Transfer the mixture to a grinder jar.
Grind to make a smooth batter.
Transfer to a bowl.
Add eno and 1 tbsp water. Mix well.
Heat a non-stick tawa over a high flame.
Splash some water and wipe it.
Add ¼ tsp oil and spread it with the help of tissue paper.
Pour a ladle of batter over the hot tawa. Allow it to spread on its own.
Cook the dosa over a high flame until the bubbles form.
Then lower the flame to medium and cook until the dosa sets from the surface.
Once the dosa is cooked, remove it from the tawa using the spatula.
Your instant sponge dosa is ready!
Serve it hot with sambar and coconut chutney.
Instant Masoor Carrot Dosa

1 cup masoor dal, washed
⅓ carrot, chopped
1 dried red chilli
½ tsp cumin seeds
1-1.5 cups water
Salt to taste
Oil for cooking
Instructions:
Grind the masoor dal, carrot, red chilli, cumin seeds, and a little water to form a smooth paste.
Add the remaining water to the dal paste and mix until you get a smooth batter.
Add salt and mix well.
You can cook the dosa immediately or let the batter rest for 30 minutes to 1 hour.
Heat a tawa, pour a ladle of batter, and spread it evenly in a circular motion.
Drizzle oil and cook both sides until golden and crispy.
Serve hot with sambar and coconut chutney.
