Amritsari Gud Wala Suji Ka Halwa

Ingredients
  

  • 2.5 cups water
  • 1 cup gud/jaggery roughly chopped
  • 1 green cardamom
  • 4 tbsp ghee
  • ½ cup suji/rava/semolina
  • Chopped nuts for garnishing

Method
 

  1. In a saucepan, add water, gud and green cardamom.
  2. Bring it to a boil. Cook until the gud melts completely.
  3. Keep aside to cool down a little.
  4. Heat a pan over low flame/temperature.
  5. Add 2 tbsp ghee and suji. Cook for 4-5 minutes until it is fragrant.
  6. Make sure the colour of the suji doesn’t change.
  7. Pour the gud water through a strainer, a little at a time, and mix well.
  8. Cook for 1-2 minutes until all the water has absorbed.
  9. Turn the heat off. Add 2 tbsp ghee and chopped nuts. Mix well.
  10. Gud ka halwa is ready to serve!
