Veggie Cheese Sandwich for Breakfast

It is a sub or submarine vegetable sandwich that can be easily customised according to your liking. You can add any vegetable of your choice and apply any kind spread. It is a great way of adding vegetables in your diet. This sandwich is not just for the vegetarians but also for the meat lovers. It tastes delicious and is rich in vitamins, minerals, fibre and protein. Make this yummy sandwich in the morning and serve it for breakfast or carry it in your lunch box. It won’t take much time to make this dish. So give it a try.

In this recipe, I have used a garlic loaf, thinly sliced carrots, tomatoes and onions. Take a medium-sized bowl, add carrot slices, lemon juice and pepper. Allow it to marinate for 15 minutes. It will make the carrots tangy and flavourful.

To make the cheese spread I have used homemade cream cheese. But you can also use a store-bought cheese for this recipe. Add the cheese to the blender. Pour parsley, garlic cloves, butter, salt and pepper. Blend till everything has well combined. It should become creamy and smooth. You can store this spread in the refrigerator for up to a week.

To assemble the sandwich, first, cut the loaf in half and apply the cream cheese spread generously on both sides. Add the veggies and cheese slices. Serve immediately or wrap it in parchment paper and keep it in your lunch box. It is a great on-the-go or meal-prep recipe.

Ingredients:

For garlic cream cheese spread:

For the sandwich:

  • 1 garlic loaf ( or any other flavoured loaf)
  • 2 carrots, thinly sliced
  • 2-3 medium-sized onions, thinly sliced
  • 2 medium-sized tomatoes, thinly sliced
  • 3 tbsp lemon juice
  • 3-4 cheese slices
  • Salt and pepper to taste

Cooking Directions:

In a bowl, add thinly sliced carrots, lemon juice and pepper. Toss everything to combine. Allow the carrots to marinate for 15 minutes. It will become tangy and flavourful.

To a blender add cream cheese, garlic cloves, parsley, butter, salt and pepper. Pulse until combined. It should become smooth and creamy.

Cut the loaf in half. Spread each side of the loaf with 2 tbsp garlic cream cheese spread.

On the bottom slice of the loaf, add a layer of carrots, then tomatoes and ending with the onion slices. On the other half of the loaf add a layer of cheese slices.

Place the cheese side down and gently press the sandwich. Cut the veggie cheese sandwich in half and serve immediately. Or you can wrap the sandwich with parchment paper or aluminium foil and pack it in your lunch box.

  • 2 medium-sized tomatoes thinly sliced
  • 3 tbsp lemon juice
  • 3-4 cheese slices

  • In a bowl, add carrot slices, lemon juice and pepper. Toss to combine. Allow it to marinate for 15 minutes.
  • Add cream cheese, garlic, parsley, butter, salt and pepper to a blender. Pulse until combined.
