These paneer tikka rockets are the perfect snack for your Diwali party. They are tasty, colourful and so appetising. It is an easy recipe that you can make within 15 minutes on the stovetop.

To make these tikkas, you need paneer or cottage cheese, bell peppers and onions. If you don’t like these veggies then you can also add any other vegetable of your choice. Cut the paneer in square and triangle shapes. Then marinate it with a few spices. Keep it in the refrigerator for an hour. Meanwhile, the paneer is marinating, soak the wooden skewers in water for an hour. This would prevent them from burning.

Thread the marinated paneer and veggies onto the skewers and cook in a non-stick pan for 5-6 minutes. Serve these juicy and flavourful tikkas with coriander chutney. Happy Diwali!

Serves: 4 people

Ingredients:

  • 500g paneer
  • 1 red bell pepper, cut in cubes
  • 1 yellow bell pepper, cut in cubes
  • 1 green bell pepper, cut in cubes
  • 1 large-sized onion, cut in cubes
  • 1 tbsp mustard oil
  • ¼ tsp red chilli powder
  • 1 tsp garlic paste
  • 1 tsp ginger paste
  • ½ tsp black pepper powder
  • ¼ tsp chaat masala powder
  • ½ tsp garam masala
  • 1 tsp salt
  • 2 tbsp lemon juice

Cooking Directions:

Cut paneer in square and triangle shapes. Soak bamboo sticks in water for 1 hour.

To make the marinade, take a bowl and add mustard oil. Red chilli powder, garlic paste, ginger paste, black pepper powder, chaat masala powder, garam masala, salt and lemon juice. Give it a good mix.

Then add the paneer pieces. Gently mix everything together. Be very careful while mixing the paneer as they might break. Marinate for 1 hour.

Thread the paneer and vegetables on wooden skewers. Place the triangle-shaped paneer at the top so it looks like a rocket.

Heat oil in a non-stick pan over medium flame. Place the paneer skewers in the pan and cook for 5-6 minutes. Keep rotating the skewers so they get cooked on all the sides.

Sprinkle chaat masala and drizzle a little lemon juice over them. Serve the paneer tikka rockets with coriander chutney.
