Prep Time: 7-8 hours (includes soaking time)

Cooking Time: 35-40 minutes

Serves: 1 person

Kala Chana Recipe

Ingredients:

For pressure cooking chana:

½ cup kala chana or black chickpeas

Salt/sendha namak, to taste

½ cup water

For making kala chana: 

½ tbsp red chilli powder

½ tbsp dhaniya/coriander powder

½ tsp jeera/cumin powder

½ tsp amchur/dry mango powder

⅛ tsp haldi/turmeric powder

1 tbsp ghee

¼ tsp jeera/cumin

Pinch of hing/asafoetida

½ inch ginger, julienne

1 green chilli, chopped

¼ cup water

½ tsp garam masala powder

Salt/sendha namak, to taste

Instructions:

Wash the chana with water, and soak them for 7-8 hours or overnight.

Once soaked strain & rinse with water.

Transfer the chana to a pressure cooker. Add salt and water. 

Secure the lid. Cook over high flame. After the first whistle, lower the flame and cook for 10-15 minutes or until they are fully cooked.

In a bowl add, red chilli powder, coriander powder, cumin powder, amchur powder, turmeric powder and a little water. Mix well to make a lump-free paste. Keep it aside.

Heat a pan over medium flame. Add ghee, cumin, hing, ginger and green chilli. Cook until the cumin splutters.

Add the spice mixture and stir continuously. Cook until oil separates

Add the cooked chana, water, garam masala and salt. Mix well.

Cook until the water completely evaporates & the masala coats well.

Kala chana is ready!

White Suji Halwa Recipe

Ingredients:

¼ cup ghee

½ cup suji/semolina

1.5 cups water

½ cup sugar

1 hari elaichi/green cardamom, slightly broken

1-2 tbsp chopped nuts

Instructions:

Heat a pan over low flame, add the ghee and suji. Stir and cook the suji until it is aromatic.

Add water, sugar and green cardamom.

Keep cooking while stirring continuously until it has thickened and the water has absorbed.

Switch the flame off.

Add chopped nuts. Mix well.

Suji halwa is ready!

Deep fry atta/wheat flour puri.

Serve hot with kala chana and suji halwa.
