Serves: 1 person

Ingredients:

1 egg

Mozzarella cheese, as per your liking

Leftover pizza seasoning or mixed herbs

Leftover chilli flakes

1 tbsp oil

Salt to taste

Method:

Heat a small kadhai or tadka pan over a medium flame.

Pour oil and gently swirl the kadhai to spread it out.

Allow the oil to heat up. Don’t add egg to cold oil, otherwise, the egg might stick to the bottom of the kadhai.

Carefully drop the egg. Oil will splatter a little, so be very careful.

Then, over the egg white, sprinkle mozzarella cheese, mixed herbs or pizza seasoning, chilli flakes and salt.

Allow the egg to cook for 1-2 minutes or until the egg sets, the edges are crispy and the cheese has melted.

Transfer to a plate. Serve hot with toasted bread slices.
