A quick and easy hara bhara maggi noodles recipe! This is a spicy and tangy green sauce maggi recipe which requires only a few ingredients and is packed with fresh and bold flavours.

Recipe Tips:

  • I have used spinach and coriander in a 1:1 ratio. But you can also adjust it according to your liking.
  • Add green chillies and lemon juice as per your taste.

Ingredients:

35g masala maggi noodles

1 large handful of spinach, approximately 1-2 cups

1 large handful of coriander leaves, approximately 1-2 cups

2 large green chillies

4-5 cloves of garlic

2 tbsp lemon juice

2 tbsp oil

1.5 cup water

1 packet maggi tastemaker

Salt to taste

Method:

To make the hara bhara paste:

In a blender jar, add spinach, coriander leaves, green chilli, garlic, lemon juice, oil and a little water.

Press it down with a spatula. Close the lid. Blend until you get a smooth paste.

You may have to stop a couple of times to scrape the jar and blend again.

To make the hara bhara maggi:

In a saucepan, pour water, hara bhara/green paste and maggi tastemaker. Mix well.

Heat the saucepan over a medium flame/temperature while stirring regularly.

Bring to a boil. Allow it to cook for 30 seconds. Then pause the induction or lower the flame.

Break the maggi noodles into small pieces and add them to the saucepan.

Add salt and give it a good stir.

Bring to a simmer at low heat/flame and then cover the saucepan with a lid.

Cook for a minute and then uncover.

Continue cooking for 2 minutes or until the noodles are almost cooked.

Transfer it to the serving bowl.

Hara bhara maggi is ready to serve.
