Kesar Badam Milk | Cosy Winter Drink

Kesar badam milk or doodh is a traditional Indian beverage. It is made with milk, almonds and saffron. Which are extremely nutritious and healthy. Here I have used whole milk as it helps in giving a rich and creamy texture to this drink. But you can also use skimmed milk if you like.

To make this, bring the milk to a boil and then add almond paste and saffron (soaked in 2 tablespoon milk). Mix everything well and let it simmer for a few minutes. As soon as the milk starts to thicken, turn the heat off and serve immediately. This drink tastes amazing when served hot. But you can also serve it chilled if you desire.

So when the weather outside starts getting chilly, make this simple milk recipe, curl up under a blanket and enjoy!

Prep Time: 20 min | Cook Time: 15 min | Total Time: 35 min

Serves: 2 people

Ingredients:

  • 2.5 cup full-fat or whole milk
  • ¼ cup almonds
  • 10-12 saffron strands
  • 3 tbsp sugar

Cooking Directions:

In a small bowl, soak saffron strands in 2 tbsp lukewarm milk.

In another bowl, pour hot water and add the almonds. Soak for 15 minutes.

After 15 minutes, drain the almonds and peel the skin off. In a blender jar, pour ¼ cup milk and add the almonds. Grind until it becomes smooth.

The almond paste should be thick and smooth. It’s okay if look slightly grainy.

Heat the remaining milk in a non-stick pan over medium flame. Bring it to a boil while stirring occasionally.

Once it comes to a boil, lower the flame and add the almond paste, saffron milk and sugar. Mix thoroughly.

Allow it to simmer for 5-10 minutes or until the milk thickens. As soon as the milk starts to thicken, turn the heat off.
