Stuffed Potato in Chilli Garlic Sauce

Stuffed Potato in Chilli Garlic Sauce

Stuffed potato in chilli garlic sauce is a simple Chinese dish. Slices of potatoes with cottage cheese filling are dipped into a batter and then fried. These stuffed potatoes are then coated with a Chinese hot garlic gravy. And then sprinkled with freshly chopped spring onions. So its a pretty easy recipe that you can prepare at your home at any time.

It is an excellent side dish. The chilli garlic sauce gives a wonderful taste to the dish. It also gives a nice glaze to the stuffed potatoes. If you want then you can alter the sauces according to your liking. The potatoes with cheese filling add a nice crunch to the dish. They are crispy on the outside and soft on the inside. You can also have these as snacks. Just like a potato pakora or fritters. In place of the stuffed potatoes, you can also use other vegetables like broccoli, cauliflower, french beans etc.

This is one of my favourite vegetarian Chinese recipes. It is a perfect dish that can accompany all the other non-vegetarian Chinese dishes and noodles. So let’s jump into the recipe…

Ingredients:

For the filling:
  • 2 medium-sized potatoes
  • 150 gm grated cottage cheese or paneer
  • 1/2 tsp pepper
  • 1/2 tsp sugar
  • 1/2 tsp salt

For the batter:

  • 1/2 cup all-purpose flour
  • 1/2 cup cornflour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup water
  • 1 tbsp water
  • 1 tbsp egg
  • 1 tbsp oil
  • Oil for frying

For the sauce:

  • 1 tbsp chopped garlic
  • 1/2 tbsp chopped ginger
  • 1 medium onion, finely chopped
  • 5 green chillies, finely chopped
  • 2 tbsp red chilli sauce
  • 4 tbsp tomato ketchup
  • 1 tbsp dark soy sauce
  • 2 tbsp cornflour

Direction:

  • First wash the potatoes, then peel the skin and then thinly slice them. The potato slices should not be thick or else it would be undercooked when fried. Then dip the slices in cold water to avoid it from getting discoloured.

  • In another mixing bowl, add 1/2 cup water, egg, and oil. Mix well.

  • Then pour the wet ingredients into the dry ingredients bowl. Mix thoroughly. If needed then add 1 tbsp water. The batter should not be too thick or too thin. It should of coating consistency.
Fry Batter
  • Heat oil in a wok. Drop batter into the oil and if it comes to the top within 1 or 2 seconds then it means the oil is ready.

  • Dip the stuffed potatoes into the batter. Make sure it is well coated. Then drop it into the oil. Fry the potatoes on medium heat till it becomes golden yellow in colour. Take it out and allow it to cool down.
Stuffed Potatoes
  • In a frying pan, heat oil and add the garlic. Saute for a minute then add ginger and cook it for another minute.

  • Add green chillies, saute for another minute. Then add the onion. Saute it over a high flame until onion is soft.

  • In a mixing bowl, add all the sauces and water. Mix well.

  • Add the sauce mixture to the pan. Mix well.

  • Take half cup water and add cornflour. Mix thoroughly.

  • Add it to the gravy. Stir it continuously until the gravy starts to thicken.
