Prep Time: 15 min | Cook Time: 30 min | Total Time: 45 min

Serves: 4 people

Ingredients:

  • 1 cup all-purpose flour
  • 2 tbsp ghee or clarified butter
  • Salt to taste
  • 1 tbsp oil
  • ⅓ cup carrot, chopped
  • ¼ cup french beans
  • 2 tbsp pizza sauce
  • ⅓ cup mozzarella cheese, cut in cubes (approximately 10-15 cubes)
  • Oil for deep frying
  • Water, for kneading the dough

Cooking Directions:

Heat a non-stick pan over medium flame. Pour oil and allow it to heat up. Add the chopped carrots and saute for 2-3 minutes. Then add french beans and cook for another minute.

Pour pizza sauce and stir everything well. Cook for another 30 seconds and then turn the heat off. Keep it aside to cool down completely.

In a medium-sized bowl, add all-purpose flour, salt and ghee. Mix everything well for a few seconds until you get a breadcrumb-like texture.

Pour enough water to make a firm dough. Avoid over kneading as it can make the kachori chewy. Cover the dough with a damp cloth and allow it to rest for 15 minutes.

Divide the dough into 10 equal balls. Take one dough ball, flatten it out, apply veggie sauce, place a cheese cube and then seal the pizza kachori. Repeat the same process for the rest of the dough balls.

Heat enough oil in a wok over a high flame. Once the oil heats up, lower the flame and add the kachoris into the oil. Fry the kachoris until they turn golden and crispy. Take them out and place them over an absorbent paper. Fry all the kachoris in the same manner.
