Tricolour Vegetable Salad with Garlic-Butter Dressing

Tricolour vegetable salad is a vegetarian salad which is made with cherry tomatoes, paneer, onions, cucumbers and mint leaves. All these colourful veggies are tossed in a tangy and buttery dressing which adds a surprising twist to this salad. This dish is packed with nutrients and flavours. Serve it as a meal on its own or as a side dish with dinner.

Serves: 4 people

Ingredients:

  • 200g cherry tomato, cut in half
  • ½ cup paneer or cottage cheese, cut in cubes
  • 1 medium-sized onion, chopped
  • 2 medium-sized cucumber, chopped
  • ¼ cup mint leaves

For the garlic-butter salad dressing:

  • 2 tbsp butter
  • ½ tbsp garlic, chopped
  • 1 green chilli, chopped
  • ½ tsp black pepper powder
  • 1 tbsp lemon juice
  • Salt to taste

Cooking Directions:

Heat a non-stick pan over medium flame. Add butter and allow it to melt. Then add chopped garlic and green chilli. Cook for a minute or until the garlic becomes golden. Add black pepper powder, salt and lemon juice. Mix and turn the flame off. Keep it aside.

In a large bowl, add cherry tomatoes, paneer, onion, cucumber and mint leaves. Pour the dressing and give it a gentle toss.
