You just need a few ingredients like rice, schezwan sauce (I have used Ching’s Schezwan Chutney) and a few veggies. And within just 10 minutes you can make a desi street-style schezwan fried rice at home.

Fried Rice Tips:

Day-Old Rice

A bowl of day-old rice is the key to making the best fried rice. I have already shared a recipe for how you can cook rice (80 percent) for making perfect fried rice.

Prep Ahead

It takes less than 10 minutes to cook fried rice. So chop all the veggies and keep them ready.

Large Pan Or Wok

Always use a large pan or wok to make fried rice. So that all the ingredients can cook evenly and you can easily toss everything.

Iron Wok

If you are using an iron wok, apply little oil to the entire wok and heat it over a high flame (you can apply it with a tissue or cloth). Make sure you heat the wok very well, as this would make the wok non-stick.

High Heat

While cooking fried rice always keep the flame high. And keep tossing or stirring, otherwise, the ingredients might burn.

Break The Clumps

Before adding rice to the wok, fluff it with a fork. So that if there are any clumps then they are already broken.

Stir-Fry In Small Batches

If you are planning to cook a large amount of fried rice then do that in small batches. And later on, mix everything in a large bowl. This will prevent the fried rice from becoming mushy and the rice grains won’t break.

Serves: 2 people

Ingredients:

2 cups cooked rice, 80% cooked

3 tbsp schezwan sauce or chutney

2 tbsp garlic, chopped

1 tbsp ginger, chopped

¼ cup onion, chopped

½ cup carrot, chopped

½ cup french beans, chopped

2 tbsp oil

Salt to taste

Method:

Heat a wok over high flame. Pour oil.

Once the oil heats up, add garlic. Cook until it is fragrant and slightly golden in colour.

Add ginger and cook for a minute.

Add onion and cook for another minute.

Then add carrot and french beans. Cook for 2 minutes while stirring continuously. Make sure the veggies remain crunchy.

Add schezwan sauce and salt. Give a good stir.

Add the cooked rice (this rice is 80 percent cooked, click here to watch how to cook rice for fried rice).

Toss the rice with the veggies very gently. Otherwise, the rice grains will break.

Veg schezwan fried rice is ready to serve!
